Highlighting Breakfast: GFC Proposes Innovative Buffet Ideas Using Processed Ingredients

GFC's Vision for Breakfast Buffets

GFC Co., Ltd., a company based in Gifu Prefecture, Japan, has been at the forefront of developing and selling processed food ingredients for the food service industry. Recently, the company held exhibitions in Osaka, Tokyo, and its headquarters in Gifu to focus on the theme of breakfast. The exhibitions saw over 300 attendees at each location, demonstrating a significant interest in breakfast menu innovations.

For many years, GFC has specialized in providing traditional Japanese ingredients, but changing consumer preferences have led to a demand for versatile ingredients that can be used in both Japanese and Western cuisine. Understanding this shift, GFC aims to support chef and restaurant owners in menu development by proposing new usage methods for their ingredients that enhance value while addressing food waste and labor efficiency.

The Importance of Breakfast for Hotels and Inns

According to Japan's monthly lodging statistics by the Japan Tourism Agency, the occupancy rates for hotels and inns have recovered significantly since the pandemic, largely due to an increase in inbound tourism. A private survey analysis revealed that breakfast options are a crucial factor in hotel selection. Reasons include media highlights such as “best breakfast rankings” by online travel agents, the opportunity to experience local cuisine, and the ability to cater to personal preferences regarding health and sustainability.

Consequently, buffet-style breakfasts, allowing guests to choose their meals, have become more popular than traditional set meals served on trays. GFC has embraced this trend by showcasing a variety of small dish menus, desserts, and innovative ways to enhance meal presentation, all aimed at reducing food waste while providing visually appealing and customizable breakfast options.

Embracing “Small Dish Cuisine”

Recently, there has been a growing desire among consumers to experience a variety of flavors in smaller portions, leading to the popularity of small dishes, referred to as “kobachi.” Media outlets, from television to magazines, have embraced this trend, showcasing breakfast menus that feature multiple small dishes, such as those at hot spring inns or customizable mini rice bowls. GFC is expanding its offerings of ingredients that are easy to serve as small dishes and has developed presentation tools that allow for attractive breakfast setups.

Moreover, they proposed menu ideas that encourage minimal labor while offering a range of options. Unique dishes include Italian-style fish dumplings simmered in tomato sauce, a Western-style mix of tofu and mascarpone cheese with fruits and vegetables, and French toast made from the traditional Japanese sweet omelet, “datemaki.” These proposals aim to diversify menus and suggest ways to use ingredients efficiently without excess waste.

Dessert: The Final Touch of Breakfast Satisfaction

In recent years, dessert has become a significant element influencing breakfast satisfaction levels in hotels and inns. One-bite desserts catered to the need for smaller portions have gained popularity due to their ease of consumption and variety. GFC offers a range of dessert items, from mini dumplings to convenient bavarois and puddings, along with preparation ideas that are visually appealing and Instagram-friendly.

The objective is to assist hotels and inns in enhancing overall breakfast satisfaction and creating a delightful morning experience that encourages repeat visits.

Learning from Global Breakfast Trends

During the exhibition, GFC also organized a tasting event centered around “Global Breakfasts.” This initiative explored overseas markets and ideas that could enrich Japan’s culinary landscape. Highlights included Turkish-style scrambled eggs called “Menemen,” a Greek yogurt salad with pumpkin, and a New York favorite, the “Acai Bowl,” reimagined as “Acai Salad.” Among these, the “Acai Salad” received high praise for its healthy blend of pickled purple cabbage with the superfood acai, presenting a menu option with added value that appeals to both health-conscious consumers and the inbound tourism market.
