From March 2, 2026, until May 31, 2026, the restaurant "Waldhaus" will offer the Grand Bach Parfait: "Fermenté – Fraise & Matcha". This parfait reflects a deep appreciation for Japanese food culture
and its fermented delicacies.

The parfait, featuring a stunning combination of vibrant green matcha and bright red strawberries layered within a clear glass, is designed to evoke the feelings of spring, reminiscent of a flourishing garden. Named "Fermenté," which means "fermented," this sumptuous dessert incorporates the subtle flavors of traditional Japanese fermented ingredients such as sake and amazake, perfectly complemented by the sweet and tart notes of seasonal strawberries.

At the heart of this parfait lies a refreshing vegan strawberry ice cream, surrounded by a delicate matcha cream that boasts a touch of bitterness.
