Nén Tokyo's Summer Menu Launch: A Culinary Experience



On June 24, 2026, the modern Vietnamese restaurant Nén Tokyo will introduce its impressive summer tasting menu titled "Stories of Vietnam." This launch celebrates Nén’s recognition as a three-time Michelin Green Star winner, showcasing a remarkable balance of sustainability and culinary creativity. Located in the trendy Daikanyama area of Tokyo, Nén Tokyo is set to deliver an innovative gastronomic experience that reflects the vibrant flavors of Vietnam during the summer season.

Nén Global Co., Ltd., headquartered in Shinagawa, Tokyo, aims to highlight the essence of Vietnamese cuisine while adapting to Japan's delicate seasonal changes. This summer, the restaurant will present a tasting menu comprised of 11 courses that focus on the bold and lively character of Vietnamese ingredients and spices that come alive in the heat, providing patrons with an unforgettable dining experience.

Highlights of the New Menu:



1. GOLDEN | 黄金
A creative dish inspired by the beloved Vietnamese fried spring rolls featuring Hokkaido tiger shrimp, heart of palm, and Oita Shiroaritake mushrooms. The rice paper utilized in this dish carries a multitude of textures and colors, celebrating local cultural diversity. The sweetness of the high-quality Hokkaido shrimp beautifully melds with the earthy flavors of the Shiroaritake, representing the ingenuity of traditional Vietnamese cooking.

2. THE DEPTH OF NÉN | Nénの深さ
This dish honors the humble “Nén” (a small Vietnamese onion) which has been a focus for Chef Summer Le for over a decade. Featuring Miyagi beef tongue, this course encapsulates the philosophy of finding extraordinary depth in seemingly ordinary ingredients, merging the robust flavors of the beef with the unique characteristics of the Nén onion.

3. ROBUSTA 2.0 | ロブスタ2.0
An enchanting dessert transforming Vietnam's iconic egg coffee into a rich sweet treat. Combined with robusta coffee and luxurious custard, this dish promises a smooth and lingering finish that contrasts beautifully with its flavor profile.

4. FRAGRANCE OF SUMMER | 夏の香り
This dessert is inspired by the rich scents of a Vietnamese summer, featuring lychee, osmanthus, and mango. It captures the essence of summertime with ingredients like dried lychee and osmanthus liqueur that evoke the memories and fragrances of the season, designed to be enjoyed long after the moment has passed.

About Nén

Originating from Da Nang, Chef Summer Le began her journey in sharing Vietnamese culinary traditions through a blog during her student years, culminating in the establishment of Nén. Known for her storytelling approach to cooking, she has earned accolades both domestically and internationally for her emphasis on cultural narratives in her cuisine. With a study abroad experience at Ritsumeikan Asia Pacific University in Oita, Japan, Summer has integrated Japanese aesthetics and culinary practices into her own philosophy.
