This unique dining experience will be available from July 1 to July 31, 2026, featuring a special menu crafted by Executive Chef Takuji Nakano. This event showcases the rich and diverse flavors of Japan, highlighting the best local ingredients from various regions across the country.

A Celebration of Japan’s Culinary Heritage



The event coincides with the FLAVORS IN TRANSIT 2026 initiative, a remarkable campaign that highlights the unique culinary traditions of Japan's diverse regions. The Ritz-Carlton Tokyo’s bistronomy restaurant, Towers, will present a meticulously curated menu entitled “Treasures of Japan.” Chef Nakano has traveled extensively throughout Japan to source the highest quality ingredients, connecting passionate producers with diners who appreciate the nuances of local cuisine.

Diners will be treated to dishes made from exquisite ingredients such as additive-free sea urchin from Hakodate, fresh green asparagus, branded Japanese beef from Kochi, traditional sun-dried salt, and natural honey from Kumamoto, embodying the true essence of Japan’s rich gastronomical landscape. Each dish promises to be a sensory delight, crafted using sophisticated French culinary techniques—showcasing the brilliance of each ingredient.

Additionally, the experience will include a captivating wine pairing from Coco Farm Winery in Tochigi Prefecture, further enhancing the depth and narrative of Japanese food culture.

Notably, a unique dinner event will occur on the opening day, July 1, 2026. Producers will be present to share their stories and passion for their craft, creating an unforgettable evening of fine dining and storytelling. Guests can engage with the very individuals who bring these ingredients to life, enjoying a bespoke gastronomic adventure.

The menu, inspired by seasonal ingredients, will feature:
  • - Amuse-Bouche: Sea urchin and kelp consomme jelly from Hakodate
  • - First Course: Sweet shrimp tartare with fruit tomatoes and basil panna cotta
  • - Second Course: Sautéed green asparagus with salt butter and bresaola
  • - Third Course: Roasted rockfish from Hokkaido served with seaweed butter and saffron consomme
  • - Fourth Course: Roasted red beef from Kochi, eggplant puree, and beef jus
  • - Dessert: Poached white peach with green tea jelly and Tochigi honey ice cream
  • - Mignardises: Warm madeleine
