Kobe-ya, a renowned bakery based in Japan, is launching a new flagship store at Atre Ebisu on August 20, 2026, celebrating its rebranding under the slogan 'Be Playful.' To commemorate this exciting milestone, the bakery will offer an extraordinary range of five unique bread products, inspired by the creative spirit of baking that knows no limits.

Leading the product development team is Yuki Nagata, a celebrated baker with two world championship titles to his name. This special product series showcases his team's commitment to delivering delightful experiences at the dining table, focusing on high-quality ingredients and innovative concepts. With the theme of 'the serious playfulness of a bakery,' each product aims to surprise and delight customers.

Among the highlights of this new range is the 'Butter Salt Bread,' which promises a delightful experience that feels indulgent and a bit rebellious. Crafted using premium French fermented butter and Guérande salt, this bread exemplifies a unique texture achieved through a distinctive baking method that creates a crispy outside while keeping the inside juicy. The result is a heavenly flavor that takes taste buds on a delightful journey.

Gourmet Sandwiches


In addition to the signature Butter Salt Bread, the bakery will also introduce two limited-edition gourmet sandwiches featuring select ingredients:
1. Gruyère & Roasted Ham Sandwich: A classic combination of rich Gruyère cheese and roasted ham, complemented by the freshness of arugula and tomatoes, and the tanginess of French mustard.
2. Salmon & Avocado Sandwich: A luxurious pairing of smoked salmon and avocado, enhanced with honey cream cheese that adds texture and balances salty and sweet flavors, finished off with a hint of dill relish.

Both sandwiches will be available from August 20 to September 2, priced at 1,080 yen each.

Decadent Danish Pastries


Continuing the theme of indulgence, the bakery will also offer two impressive Danish pastries designed to evoke the quality of a patisserie:
1. Cream-Filled Choux Danish: This pastry features luxurious cream filling that spills beautifully from its delicate exterior, enriched with a custard and whipped cream blend for a rich flavor explosion.
- Available from September 3 to September 9, priced at 756 yen.
2. Pudding Danish: Topped with a whole pudding and accompanied by a unique caramel injection experience, customers can drench their pastry in caramel for an added layer of sweetness and flavor.

Meet the Chef


Yuki Nagata is an executive officer at Kobe-ya and the Marketing Division Manager. Since joining the company in 1998, he has honed his skills in bread making. His achievements include winning the prestigious Coupe du Monde de la Boulangerie as Japan's representative in 2012 and securing victory in the Masters of Bakery competition in 2014. Today, Nagata plays a crucial role in training future talent and overseeing product development at the bakery.
