A Refreshing Innovation

This year, the Melon Shaved Ice takes inspiration from the hotel’s beloved mascot, the Shangri-La Bear. The dessert captures its adorable likeness, making it not just a treat but a whimsical experience for both the eyes and the palate.

The bear's ears are crafted from Earl Grey macarons, which house a delicious Earl Grey ganache. Its charming face features cocoa crumble for the eyes and nose, while the mouth is beautifully encircled with baked meringue. Sitting atop this delightful creation is a layer of rich rare cheese shanty, boasting a creamy texture that melts in the mouth, adorned with a sprinkle of toasted coconut for a hint of sweetness.

Utilizing nearly an entire fresh melon, the shaved ice is prepared from lush, 100% fresh melon juice frozen and finely shaved. A hollowed-out domestic musk melon is filled with silky almond tofu, adding a delightful crunch with white chocolate and crumble accents. To complete this extravagant treat, a scoop of rich Jersey milk ice cream is generously piled atop the melon shaved ice, culminating in a harmonious blend of flavors and textures that envelops the senses.

To accompany the Melon Shaved Ice, guests are presented with grissini inspired by Dubai chocolate. This treat combines pistachios and white chocolate with crispy kadaif, all elegantly dipped in dark chocolate and finished with delicate coconut flakes.
