Sun's Tomato Noodle Unveils New Seasonal Dish
Starting from May 1, 2025, Sun's Tomato Noodle, a specialty tomato ramen restaurant chain operated by Ipoh Inc., will introduce the limited-time 'Seasonal Vegetable Fried Koji Tomato Noodle' at all its locations and via its online store.
This special dish features noodles made with rice koji, offering health benefits and rich flavor. By resting the rice koji with the noodles overnight, a unique tomato sauce with deep sweetness and umami is achieved. Adding clam and mussel broth provides layers of flavor. The dish is beautifully garnished with clams and mussels on the shell, alongside seasonal vegetables like asparagus, okra, and burdock root, which are lightly fried with rice flour, ensuring a colorful presentation. The nutrients and dietary fiber from seasonal vegetables and rice koji help maintain a healthy gut environment.
Completing the experience, customers can opt for a set that includes three side dishes: Edo greens mixed with koji, spicy Korean-style chicken chashu, and kimchi. Diners can even enjoy the leftover broth with healthy eighteen-grain rice for a risotto-style finale, or choose a dessert featuring chilled rare cheesecake topped with fruity fermented vinegar and tomato jelly.
