This nomination follows the resignation of former Executive Chef, Daniel Calvert, who successfully elevated SÉZANNE to one of the premier dining establishments globally. Calvert recognized Lancaster's talent and culinary philosophy, ensuring a seamless transition of the restaurant’s legacy.

Lancaster, acclaimed in the culinary world, honed his skills at top-tier establishments such as Midsummer House in Cambridge and Oaxen Krog in Stockholm. He made a significant mark in 2022 by opening his restaurant, Poise, in Singapore, which earned a Michelin star in its debut year, showcasing an unwavering philosophy centered on precision and restrained beauty in cuisine.

Born in Tavistock, Devon, England, Lancaster’s culinary journey is characterized by strict adherence to technique and profound respect for ingredients. He modernizes classic French cuisine while skillfully employing methods like fermentation, aging, and pickling to achieve depth, texture, and clarity in flavors. At SÉZANNE, he aims to engage deeply with Japan's seasons and exceptional local ingredients, continuing to embody a balanced fusion of global perspectives and local values.
