Yoshinoya Holdings' Award-Winning Initiative to Combat Food Waste



Yoshinoya Holdings, a prominent Japanese company renowned for its beef bowl dishes, has recently made headlines by receiving the Environmental Minister Award at the 8th Japan Open Innovation Prize, organized by the Cabinet Office. This accolade underscores the company's commitment to sustainability and innovation through a collaborative initiative involving industry, academia, and government aimed at reducing food waste in Japan.

The initiative, known as the "Sustainable Co-Creation Model for Food Waste Reduction and the Revaluation of Food By-products," is a partnership between Yoshinoya Holdings, ASTRA FOOD PLAN, a startup based in Saitama, and women's nutrition university Kagawa Nutrition University. This project primarily focuses on the processing of standard-exceeding onion by-products generated during the production of Yoshinoya’s signature dishes. By utilizing these food scraps in innovative ways, the company not only addresses the pressing issue of food waste but also strives for a greener future.

Incorporating ASTRA FOOD PLAN’s advanced overheating steam drying technology, Yoshinoya began converting these onion scraps into dried flakes in 2023. This process not only preserves the original flavor and nutritional value of the ingredients but also plays a vital role in waste reduction. By February 2024, a new overheating steam machine will be introduced within Yoshinoya's Tokyo factory, which will establish a seamless production process from collection to drying, thus achieving zero waste while simultaneously cutting costs and reducing CO₂ emissions.

The dried flakes produced are then purchased by ASTRA FOOD PLAN and marketed under the brand name "Tama Onion Gururiko." This innovative collaboration is a testament to Yoshinoya's endeavor to minimize waste through circular economy principles, working hand-in-hand with educational institutions like Kagawa Nutrition University and local government entities in Saitama to further expand their market reach.

Yoshinoya's management philosophy, aligned with the slogan "For the People - Everything for the People," underscores the importance of providing safe, healthy, and enriching meals as a vital social value. This philosophy is integrated into their operations through collaborations with outside nutrition experts to enhance their ingredient development processes and ensure they continue to meet contemporary dietary needs.
