Fujin Tree's New Culinary Experience: Four Original Natural Wines



Fujin Tree Taiwanese Restaurant, renowned for its Michelin star, has recently introduced a selection of four original natural wines to complement its sophisticated menu. Located across two locations in Tokyo—COREDO Muromachi Terrace and Harajuku Quest—these wines aim to elevate the dining experience with their unique flavor profiles and perfect pairing to Taiwanese dishes. Starting from August 7, 2026, guests can enjoy these carefully curated wines produced by Kiyosumi Shirakawa Fujimaru Winery under the expert supervision of Tomofumi Fujimaru.

The wines available include Delaware White 2025 (white), Delaware Orange 2025 (orange), Delaware Orange Amber 2025 (orange), and Merlot 2025 (red). Each wine has been specially selected by Jay Wu, the brand owner of Fujin Tree, who purchased the barrels while considering optimal aging and fermentation processes to enhance the synergy between the wines and the restaurant's culinary offerings.

The Wines


1. Delaware White 2025: This white wine dazzles with the floral aroma of ripe Delaware grapes and vibrant acidity. It's refreshingly fruity and pairs well with seafood and chicken dishes.

2. Delaware Orange 2025: An elegant orange wine showcasing notes of jasmine and citrus. It balances fresh acidity with a hint of skin bitterness for a delightful tasting experience.

3. Delaware Orange Amber 2025: A more complex orange wine that has undergone oxidative aging, offering rich aromas of osmanthus and nuanced nuttiness, along with the pleasing bitterness of orange peel.

4. Merlot 2025: This red wine is characterized by luscious berry flavors and hints of black pepper, making it a perfect match for rich meat dishes due to its smooth tannins and soft acidity.

Founded by Jay Wu in 2014, Fujin Tree aims to redefine sophisticated Taiwanese dining by pairing it with quality champagne. The restaurant quickly gained a reputation among food enthusiasts and celebrities, receiving accolades such as a spot in the '50 Must-Visit Attractions' list and inclusion in Taiwan's 'Top 10 Must-Try Foods' in 2018. It has proudly maintained its Michelin star status from 2021 to 2025.
