Discover the Charm of Fukui: A Gastronomy Journey of Craftsmanship and Flavor

Discover the Charm of Fukui: A Gastronomy Journey of Craftsmanship and Flavor

Fukui Prefecture, located on the Sea of Japan, is renowned for its stunning landscapes and rich culinary heritage. The upcoming Fukui Gastronomy Project, titled Etsuzan Jakusui, is set to officially launch in 2025, aiming to promote the prefecture as a premier culinary travel destination.

The project draws its name from Etsuzan, referring to the deep green mountains of the Echizen region, and Jakusui, representing the clear waters of Wakasa. These natural gifts have shaped Fukui's rich food culture, crafted by the hands of local artisans over centuries. Under the guidance of prominent food columnist Takeshi Kadokami, who serves as the project’s overall producer, this initiative embodies the theme “Food x Craftsmanship in Fukui.”

A Culinary Showcase
The Fukui Gastronomy Project aims to highlight the local produce and the craftsmanship behind it. Picture freshly harvested vegetables from Echizen, cut with precision using traditional 700-year-old blade-making techniques. Imagine seafood from the Wakasa region, artfully presented on beautifully crafted lacquer ware that showcases the skill of local artisans. Complementing these dishes, Fukui's culinary scene thrives on aged soy sauce and vinegar, richly flavored by the distinct local terroir.

As part of the project, a press conference will take place on June 25, 2026, in Minami-Aoyama, Tokyo, where key updates and the profiles of new curators will be revealed. Attendees will also receive a preview of upcoming events including a food festival, monthly fairs, and tours all around Fukui’s culinary landscape.
