Akakara Noodles, a new frontier in noodle dishes, is set to debut in Tokyo's Shibuya on August 28, 2026. Brought to life by Idea Co., Ltd and crafted by master chefs, this dish embodies a harmonious blend of flavor and spice, arriving from Korea, through Los Angeles, and finally to Japan.

The essence of Akakara Noodles transcends being merely a spicy dish; it encapsulates the approach of intertwining flavors—culminating in a rich broth. This exceptional recipe consists of beef tendon and bone simmered for over 16 hours along with a medley of vegetables and seafood stock. The homemade condiment “Tadegi”, essential in Korean cuisine, dovetails with chicken oil from the original Kagura Chicken, enhancing the depth of flavor. The finishing touch involves simmering all these ingredients, including special noodles, in a sizzling stone pot.

What sets Akakara Noodles apart is the meticulously crafted “tasting window” defined as 15 minutes. During this time, taste brings forth an unfolding experience, optimizing temperature, aroma, noodle texture, and broth consistency. The inception of Akakara Noodles traces back to 2019, when Ryusuke Yodoi, COO of Idea Co., Ltd., discovered a flavor that would eventually lead to the development of this dish. Instead of competing with sheer spiciness, the design emphasizes, “It’s spicy, but first and foremost, it’s delicious.”

Crafted with precision, the balance of complex flavors—richness, sweetness, heat, and aroma—was perfected through collaboration among chefs from various cuisines, including Japanese, Yakiniku, Sundubu, and Italian, over several years.

Daisuke Hamamoto, Executive Chef of Arancino in Hawaii and Japan, notably contributed to the evolution of Akakara Noodles. His experience lent a unique perspective on the overall harmony and completeness of the broth, as chefs across culinary landscapes came together to explore how much flavor could be achieved in this one bowl.

Akakara Noodles is not just a bowl of ramen or a variation of Sundubu. Unlike traditional ramen, it involves boiling ingredients and broth together in the stone pot, allowing for deeper integration of flavors as the meal evolves right until the last spoonful.

1. ### 16-Hour Simmered Broth
The heart of the dish is its luxurious broth, simmered for over 16 hours, which extracts the umami from beef tendon and bones while keeping the distinct aroma of beef foot at bay. Combining this with seafood stock contributes to a rich, yet rounded mouthfeel.

2. ### Secret Recipe Tadegi
