Revitalizing Japan's Seafood Industry with Freshness-Focused Transportation Project
On February 27, 2026, a coalition of organizations, including the Kunigami Fisheries Cooperative Association, Foodsion Co., Ltd., Takasago Thermal Engineering Co., Ltd., Japan Airlines Co., Ltd., YKK Corporation, the Okinawa Prefectural Fisheries Cooperative Federation, and the Hakodate Regional Industry Promotion Foundation initiated a pioneering initiative called the "High Freshness Transportation Project."
This project combines unique cooling technology with new packaging materials to transport freshly caught fish from the Kunigami Fishery, evaluated scientifically based on the K-value index. The aim? To deliver fish that maintain their fresh taste, reminiscent of enjoying it right at the production site, to consumers both domestically and internationally. This not only stimulates the Japanese seafood industry but also supports local economies and craft a sustainable trading network that offers appropriate pricing against quality.
Background and Objectives
The importance of establishing a framework for distributing seafood while maintaining freshness from remote areas and islands cannot be understated. This initiative will foster collaboration among seven entities across different industry sectors to establish a reliable and transparent distribution system. The aim is straightforward: to innovate the value of the seafood industry while facilitating its sustainable growth.
From December 2025, test shipments of fish caught by the Kunigami Fishing Association have been undertaken to verify quality, shipping safety, and appropriate pricing. The team is committed to enhancing the logistics systems primarily for international shipping to reach more consumers.
Key Features of the Project
1.
Thorough Freshness Management at the Source: In compliance with the high-quality fish manual prepared by the fisheries cooperative, fishermen and cooperative members work closely to ensure rigorous freshness management right after the catch and throughout the handling at the market.
2.
Soft Ice Cooling Technology: Instead of conventional ice, the project utilizes finely textured slush ice (with a diameter of only 0.05 mm), which allows for even cooling without damaging the fish body. This advanced method curtails deterioration due to time lag and ensures that the freshly caught flavor is preserved.
3.
Innovative Packaging and Air Freight Logistics: The project has developed new waterproof packaging materials that enhance safety during air transport and temperature control. These materials prevent leaks and enable the efficient use of limited cargo space to deliver fresh fish swiftly and at fair prices.
4.
Direct Digital Infrastructure and Global Distribution: Leveraging expertise from a fresh produce e-commerce platform that supports over 5,000 restaurants monthly, the project will establish direct order management systems. This system will help streamline the connection between producers and consumers, significantly shortening delivery times while safeguarding the unique quality of Okinawa's precious seafood.
5.
Scientific Freshness Evaluation: The K-value is a scientific measure for fish freshness. Establishing it as a standard will bolster appropriate pricing practices and strengthen the groundwork for high-quality seafood to circulate in the market, contributing to the sustainable development of the fishing industry.
Moving forward, the program plans to extend this model from Kunigami to other regions within Okinawa and across Japan, ensuring that more consumers can share in the experience of culinary delight presented by freshly caught seafood. Furthermore, it aims to engage a variety of knowledge partners and organizations in these efforts, facilitating a seamless transition of oceanic bounty into the hands of the next generation. Through such initiatives, they hope to further enrich Japan's food culture by breaking down industry barriers and enhancing the seafood value chain.
By prioritizing quality, collaboration, and technology, this initiative represents a transformative leap in Japan’s fishing industry, promising not just sustainability but also enhancing the culinary experiences awaiting seafood lovers everywhere.
