As the new season unfolds, the luxurious Mezam Tokyo, part of the Autograph Collection, brings a unique dining experience to its guests. From April 1 to June 30, 2026, the 16th-floor restaurant, Chef’s Theatre, will offer the
Spring Aroma Ensemble Dinner, a five-course program is designed to capture the vibrant essence of spring through food and fragrance.
The evening begins with a delightful amuse-bouche, the centerpiece being a
consommé cup infused with the rich aroma of morel mushrooms. This dish sets the tone for the culinary adventure that follows, emphasizing the seasonal ingredients that symbolize spring's awakening. Each course is artfully crafted by culinary master Kōki Kumamoto, showcasing seasonal ingredients complemented by floral, herbaceous, and citrus notes, reflecting the essence of spring.
The first course will present an elegant dish of
elderflower marinated seafood paired with
asparagus tart, topped with a gelato of white asparagus. This light yet vibrant combination will prepare your palate for a delicious journey ahead.
One of the highlights of the evening is Chef Kumamoto's signature dish,
Salmon Aspic, making its seasonal debut as an appetizer. This dish features beautifully gelatinized trout salmon accompanied by crisp spring vegetables, inviting diners to enjoy the fresh, clean aroma of spring shoots.
Moving onto the fish course, guests will enjoy
sauteed sweetfish with citronelle sauce. The sweetfish, wrapped in seaweed, is gently cooked at low temperatures, resulting in a tender texture. To elevate the dining experience, warm stones are used to release lemon grass and herb fragrances when water is added, creating a breathtaking aroma around the dish. The flavors are further enhanced by the addition of spring vegetables and a carefully crafted sauce that accentuates the sweetfish's delicate taste.
For the meat course, indulge in the
roasted Noda duck, subtly smoked with cherry blossoms. The dish is served in a manner that emphasizes the fragrant aroma, enhancing the dining experience. Guests can also enjoy duck confit with mustard and hazelnuts, adding depth of flavor and texture to the plate, allowing for a fully immersive spring gastronomic experience.
To conclude the meal, a stunning dessert—
Strawberry and Pistachio Ensemble—awaits. This visually striking plate features a pastry shell filled with rich pistachio cream and white rose-scented fromage blanc, garnished with an adorable strawberry mousse, reminiscent of a spring garden.
