In the renowned Sakai knife-making district, this craftsmanship is respected through a division of labor where each expert handles their unique aspect of the knife-making process.
Sharpening, performed by an expert sharpener, is far more sophisticated than merely sharpening the blade's tip. This detailed technique involves adjusting the overall thickness of the blade and perfecting its curve, influencing how smoothly the knife penetrates ingredients and how cleanly they are cut apart. Only with the precise skills of a sharpener does a knife made by a blacksmith transition into a fully-functional culinary tool.
