Discovering Deca: A Unique Culinary Experience in Ebisu, Tokyo

Deca: A Culinary Gem in Ebisu

On August 20th, 2026, a new culinary destination opens its doors in the vibrant neighborhood of Ebisu, Tokyo. Deca, a restaurant by Dynac Co., Ltd., is set to redefine the dining experience by focusing on seasonal Japanese ingredients through the art of firewood cooking and craft pizza.

Concept and Ambience

Upon entering Deca, diners are welcomed into a spacious and airy environment illuminated by natural light filtering through a lush terrace. The calming atmosphere allows guests to escape the hustle and bustle of the city, offering a modern yet simple design that invites relaxation. The heart of Deca is its firewood oven, central to its unique cooking methods.

Craft Pizza: A Contemporary Twist

What sets Deca apart is its specialty in a newly popular genre of pizza known as Pizza Contemporanea. Drawing inspiration from Naples, this style features traditional pizza dough made using high-quality Caputo flour, a product renowned for its natural taste and texture. The dough is prepared using an artisanal method, free from artificial enzymes and additives, and is carefully fermented at low temperatures for 24 to 48 hours. This process results in a light and airy crust that is rich in flavor yet digestible.

Highlights of the pizza menu include the Pure Sweet Tomato Margherita, made with 100% Miyazaki Juna Amato Tomato. Its sweetness and juiciness will challenge your expectations of a traditional Margherita. Additionally, the Quattro Formaggi showcases three types of handmade cheese from Kagoshima's Kotobuki Cheese, emphasizing freshness and quality by using Jersey cow milk raised on carefully selected feed. Another must-try is the Bismarck, topped with porcini sauce and raw bacon, featuring the unique Japanese egg known as Tatsu no Tamago.

Beyond the classics, Deca also offers inventive seasonal pizzas crafted from fresh Japanese ingredients. The Maitake Sudachi pizza combines the earthy flavors of fresh maitake mushrooms with Iberico pork bacon and a squeeze of sudachi citrus for a refreshing finish. There's also a special summer edition pizza featuring sweet corn prepared three ways—raw, boiled, and grilled—showcasing the ingredient’s versatility.

Seasonal Dishes from the Firewood Oven

Deca's offerings extend beyond pizza, with a diverse selection of dishes created using 100% Japanese oak wood. Here, the focus is on preserving the inherent flavors of each ingredient. Diners can relish an assortment of seasonal grilled vegetables, specially sourced by chefs from Michelin-starred restaurants. Featured dishes include a Cauliflower Delight, where cauliflower is roasted, pureed into a sauce, and served alongside poached eggs and cured egg yolk. Other tantalizing options include Veal Cutlet with Apple and Arugula Sauce and various pasta dishes celebrating seasonal fruits.

Beverage Selection

Complementing the dining experience, Deca offers an extensive wine list curated by their in-house sommelier, featuring selections from France, Italy, and the New World. Adventurous drinkers can indulge in original cocktails that fuse traditional flavors, such as Yuzu and Roasted Tea soda and Domestic Cassis with Cold-Pressed Orange Juice. Non-alcoholic options, including seasonal cold-pressed juices, are also available to enhance the meal.

Designing Comfort

The ambience of Deca has been meticulously crafted by the architectural firm MHAA (Masahiro Hoshida Artisanal Architecture), known for their commitment to creating spaces that engage the senses. With a design that seamlessly connects the dining areas across two floors and an open courtyard, guests can enjoy a unique three-dimensional feel. Each area offers a different atmosphere, balancing rough-hewn wood with smooth, modern finishes to create a welcoming environment.

Deca also features private dining areas, making it an ideal venue for special celebrations or intimate gatherings. This meticulously designed restaurant invites you to experience the beauty of Japan’s seasonal ingredients through firewood cooking and craft pizza, celebrating the rich culinary traditions of the country.
