Midwest Dairy Accelerator Unveils Six Startups Driving Dairy Innovation
As the demand for high-protein foods grows, the Midwest Dairy Accelerator has announced the selection of six pioneering startups for its second annual program. This initiative aims to bolster emerging food and beverage brands that utilize Midwest dairy as a central ingredient. In partnership with
VentureFuel, the Accelerator offers an intensive ten-week virtual session designed to propel innovation in the dairy sector.
The selected startups span diverse areas within the food and beverage market, emphasizing trends such as high-protein snacking, yogurt-based products, and globally-inspired dairy items. Each of these companies was chosen from a competitive pool, showcasing the rising wave of entrepreneurs who are redefining dairy's role in contemporary cuisine.
The 2026 Cohort
The cohort comprises six dynamic startups:
1.
Disco Cow (Chicago, IL): Founded by Kate Colehour, this company is reinventing cottage cheese with whipped protein-packed dips and spreads that offer a nutritious easy snacking solution.

Trends Reflective of Consumer Demands
This selection of startups reflects significant trends shaping the current food landscape, particularly the increasing consumer preference for high-protein, functional foods. According to
Circana, dairy product volume growth has been catapulted by value-added options that align with consumer needs for both health and enjoyment. Notably, yogurt and cottage cheese have seen remarkable increases in popularity, highlighting a shift toward protein-rich dietary choices.
Corey Scott, the CEO of Midwest Dairy, spoke on the changing consumer landscape, stating, "Consumers are increasingly looking for foods that deliver more -- more protein, more functionality, cleaner ingredients, and authentic experiences. The robust growth in yogurt and cottage cheese points to the potential for founders who develop innovative offerings that meet these evolving needs while showcasing dairy's versatility and nutritional benefits. We are excited to support them in accelerating their growth."
A Crucial Learning Experience
As part of the Accelerator, these startups will gain invaluable access to workshops, mentorship, and collaboration opportunities with experts in the dairy field, covering vital aspects like consumer insights, product innovation, marketing strategies, and pitching skills. As Fred Schonenberg, CEO of VentureFuel, stated, "This year's cohort effectively uses dairy to tap into major trends, making their products integral to the future of food innovation."
The program emphasizes the importance of startup support within the region's food innovation ecosystem, facilitating pathways for businesses to access expertise, partnerships, and commercialization opportunities that are essential for long-term sustainability and growth within the dairy supply chain.
