1. Shine Muscat Parfait

This luxurious parfait is embellished with sparkling Shine Muscat grapes. The bottom layer consists of elderflower jelly, panna cotta, and blueberry sauce, all topped with crunchy almond cookies and tart passionfruit-mango sauce. A refreshing frozen yogurt ice adds a delightful twist, while the top is adorned with generous servings of Shine Muscat, figs, and berries, culminating in a decadent autumn treat.

2. Fig Parfait

This parfait celebrates fresh, ripe figs with a complex flavor profile. The base is a zesty apple tea jelly topped with spicy chai panna cotta and a rich cassis-berry sauce, layered with crispy almond cookies. About Head Pastry Chef Yuji Takahashi

From a young age, Chef Takahashi has been passionate about creating sweets. After graduating from culinary school, he spent five years honing his skills in bakery and pastry at The Capitol Hotel Tokyu. His expertise grew as he worked as a junior sous chef at The Ritz-Carlton Tokyo. Since May 2017, he has served as the head pastry chef at The Strings Omotesando, focusing on seasonal ingredients and creative presentations for an enjoyable dessert experience.
