Experience the Essence of Southern France with Pierre Hermé's Fruit Garden Afternoon Tea

Starting from July 1, 2026, Hyatt Regency Tokyo will unveil the exclusive summer afternoon tea, "Jardin de Fruits Afternoon Tea," created in collaboration with the renowned Pierre Hermé Paris. This exquisite collection draws inspiration from the sun-drenched fruits of Southern France, bringing the fresh essence of summer gardens to life.

The "Jardin de Fruits Afternoon Tea" encapsulates a refreshing oasis filled with vibrant flavors of citrus, mango, passionfruit, and raspberries, showcasing the beauty of summer with each delightful morsel. Guests can expect a spectacular display of colors, refreshing acidity, and light fragrances that together create a dreamlike experience for the senses.

This summer afternoon tea experience offers a harmonious pairing of Pierre Hermé's elegant sweets and refreshing savory bites crafted by the chefs at Hyatt Regency Tokyo. The menu includes unique artisanal desserts and a new concept called “Café Gourmand,” which allows patrons to mix and match four signature sweets with their choice of drink, providing a lighter approach to enjoying the creations of Pierre Hermé.

A Collection of Summer Sweets

The dessert selection features six exceptional sweet dishes that celebrate the freshness and zest of summer fruits, with an emphasis on contrasting textures and flavors. Each creation, designed by Pierre Hermé, tells a different story through the delightful interplay of flavors and aromas:

  • - Macaron Solento: A delightful macaron bursting with the vibrant acidity of lime, capturing the essence of summer.
  • - Hermé Carré Envie: A sophisticated dessert combining cassis, vanilla, and violet for a refined flavor.
  • - Ella: A petite treat showcasing the bright flavors of lemon and raspberry.
  • - Cheesecake Infiniment Citron: A light cheesecake accentuated by the refreshing zest of lemon.
  • - Emotion Solento Verrine: A delectable glass dessert featuring fruity mango and lime.
  • - Millefeuille Satine: A harmonious millefeuille that highlights crispy layers and colorful fruits.

Among the highlights of the afternoon tea is the optional Pierre Hermé Paris original sweet, “Miss Gragra,” featuring a blend of crunchy macaron shell filled with pistachio ice, complemented by strawberry sorbet. This dessert perfectly melds different textures for a blissful eating experience.

Savory Delights from the Mediterranean

Accompanying the sweets, Hyatt Regency Tokyo's kitchen team has created five savory dishes designed around the themes of lightiness and freshness, drawing inspiration from Southern France and Mediterranean cuisine. These dishes reflect the refreshing essence of summer, incorporating ingredients like tomatoes, watermelon, basil, and seafood to showcase contrasting flavors:

  • - Tomato and Watermelon Gazpacho: A vibrant cold soup enriched with the sweetness of watermelon and aromatic basil.
  • - Smoked Salmon Trout Brioche: A luxurious brioche paired with dill-flavored sour cream and salmon roe.
  • - Tuna Tataki: A refreshing dish highlighting tuna with chili lemon sauce and a crispy rice topping.
  • - Finger Sandwiches: A classic blend of ham, cucumber, and cream cheese in a dainty sandwich.
  • - Ciabatta Sandwich: A Mediterranean-style sandwich featuring grilled vegetables and mozzarella.

The entire experience is designed to evoke the bright aromas and colors of the fruits of Southern France, wrapping guests in a refreshing aftertaste.
