Culinary Triumph at FOURGRAINS
In a recent culinary contest hosted by the JR Hotel Group, Takuji Kadoya from the French restaurant FOURGRAINS at Hotel Metropolitan Edmont emerged victorious. The competition took place on August 26 at the Yamato Academy of Kyoto Culinary Arts and was open to chefs aged 40 and under, further fueling the competitive spirit among aspiring culinary talents.
A Remarkable Achievement
Kadoya, having participated in this competition twice before, aimed for nothing short of victory during his third attempt. The challenge involved crafting an original Western dish featuring mandatory main and secondary ingredients. This year, chefs were required to incorporate
Setouchi flounder as the main ingredient, culminating in a fierce contest among 16 talented chefs representing regions from Hokkaido to Kyushu.
With a meticulous two-hour timeframe, Kadoya presented his dish titled
Setouchi Flounder Poupiette, Grenoble Style. Judges assessed the entries based on taste, creativity, presentation, utilization of ingredients, and overall completion. Additionally, participants were evaluated on technical skills, workflow, economic impact, and hygiene, and penalties were imposed for any time violations.
Reflecting on his achievement, Kadoya expressed, "I participated in this contest three times, and I put forth my utmost effort, determined to win this time. I am thrilled to see the outcome and grateful for the support from Executive Chef Iwasaki and my team, which has helped me reach this point. In the future, I plan to leverage this experience to support my junior chefs and pass on the baton."
