Mill and Compass Group North America Form First-of-its-Kind Strategic Partnership to Eliminate Food Waste

Mill Commercial is a state-of-the-art solution designed to tackle the pressing issue of food waste through advanced food recycling technology. By utilizing artificial intelligence (AI) to characterize food waste, this system will not only recycle food scraps on-site but will also provide real-time data on what is being wasted, thus enabling kitchens to make informed decisions regarding their operations.
Chris Ivens-Brown, the Chief Culinary Officer of Compass Group North America, emphasized the need for large food service providers to take intentional steps toward environmental responsibility. “As the largest foodservice provider, we have a responsibility to lead with intention,” he stated. The partnership harnesses a combination of culinary expertise and sophisticated technology to create a more closed-loop food system that aims for substantial waste reduction.
The Mill Commercial system employs a process involving heating, drying, and grinding food waste, achieving an extraordinary reduction in volume—up to 80%. The outcome is a dry material that resembles coffee grounds and retains the nutritional value of the food. This resultant product can be utilized as animal feed, compost feedstock, or a soil amendment, thereby turning food waste into a valuable resource instead of just another item for landfills.
According to Harry Tannenbaum, the President and Co-Founder of Mill, this partnership is set to transform the operations of commercial kitchens. “What’s exciting about this strategic partnership is bringing AI-enabled infrastructure directly into Compass kitchens, giving teams visibility into what’s being wasted, why it’s happening, and how to take immediate action,” he remarked.
Food waste is an enormous concern, with the material being the most common substance found in landfills. Current estimates indicate that over $400 billion worth of food is wasted yearly, representing a huge loss of resources and potential. Mill's collaboration with Compass Group stands to set a new standard for how commercial kitchens function, turning food waste management from an obligatory inconvenience into a calculated procedure.
