Joël Robuchon restaurant that opened in 1993, will supervise the hospitality at La Tradition. Born in Tokyo in 1946, Shimono has an illustrious background as a sommelier at
Maxim's de Paris in Ginza and further honed his skills as the head sommelier and manager at

Chef Yuhei Kurita: A Culinary Pioneer

1979 in Tokyo, Chef Kurita honed his skills at renowned local restaurants before venturing to France. Upon returning to Japan, he excelled at
FEU as sous-chef for seven years, later becoming head chef at
Rotisserie Le Dansant. In July
2020, he took on the role of the eighth head chef at the esteemed group of
