Bellwether Coffee Accelerates Growth by Expanding its Green Coffee Marketplace and Doubling Roaster Base

Bellwether Coffee: Revolutionizing the Coffee Roasting Landscape

In an impressive stride toward sustainability and quality assurance, Bellwether Coffee has announced a significant expansion of its Green Coffee Marketplace, nearly doubling the number of its Shop Roasters installed. This move comes as cafés across the globe increasingly pivot towards in-house roasting, aiming to better control quality, enhance their brand identity, and improve profit margins.

Founded to empower cafés and coffee retailers with the tools to roast better coffee, Bellwether's latest developments signal a growing trend in the industry. By increasing the selection of available green coffees to over 30 global varieties, the company caters to the evolving needs of both new and established coffee shops. Their Marketplace now features beans sourced from key coffee-growing regions, including Latin America, East Africa, and Southeast Asia.

Proven Demand for In-House Roasting

In 2025, the company shipped more roasters than it had over the previous five years combined, clearly underscoring the rising interest among café owners. Many first-time entrepreneurs are drawn to the potential for greater control over their coffee programs, while seasoned operators are eager to customize their offerings.

Ricardo Lopez, the CEO and founder of Bellwether, emphasizes the flexibility their platform offers: “We provide everything necessary for cafés to begin roasting—sourcing, roast profiles, menu guidance, and packaging—but all of it is optional. Customers have the freedom to choose as much or as little assistance as they want.”

Diverse Coffee Selection

The Green Coffee Marketplace initially launched with a mere five options but has embarked on extraordinary growth, now including coffees from renowned regions such as Costa Rica, Colombia, Ethiopia, and more. Newly introduced origins like Ecuador and El Salvador hint at an even broader selection in the future. This wide array of choices allows businesses to curate their offerings to fit their unique brand identity and customer preferences.

Tony Daussat, founder of Function Coffee Co. in the Dallas–Fort Worth area, achieved remarkable success by leveraging Bellwether’s system; what started as a goal to sell 100 bags of coffee in his first year quickly transformed into selling that in just one month. He is now on track to launch a new café location, thanks in part to his efficient in-house roasting method.

Another testament to the value of Bellwether's system comes from Michael Safarov of Teremok Coffee and Desserts in Missouri. After installing a Shop Roaster, Safarov saw substantial savings of approximately $1,200 weekly, while attracting customers seeking a fresher, locally roasted product.

Tailored Solutions for Unique Needs

Bellwether's adaptability is showcased in its partnership with Juliette's Café in Newport Beach, California. Co-owners Juliette Chung and John Hughes utilized the innovative retail space within a converted bank building, enabling them to create a thriving coffee program that relies on high-quality coffee sourced from the Marketplace. “Bellwether allows us access to exceptional beans that perform well across various brewing methods, ensuring our customers experience only the best,” stated Hughes.

For established cafés, the financial reasoning behind this shift is compelling. On-site roasting can reduce coffee costs by 30 to 50 percent compared to wholesale purchases, with the added benefit of serving fresh coffee roasted just days or weeks prior rather than months. This is not only advantageous for saving money but also for maintaining consistent flavor profiles and strengthening brand identity.

Expanding Reach and Opportunities

Currently operational in 40 U.S. states and servicing clients across 26 countries, Bellwether is set to introduce its European Marketplace, amplifying its curated sourcing model on an international scale. Recently, Bellwether showcased its enhanced Marketplace at the New York Coffee Fest, further solidifying its commitment to the coffee community and highlighting the growing interest in sustainable, quality coffee practices.

The company’s uncompromising commitment to quality and innovation has made its Shop Roaster a sought-after product in the coffee industry. With accolades such as being named Best New Product at World of Coffee Copenhagen 2024, Bellwether Coffee paves the way for a brighter future in coffee roasting.
