As the holiday season approaches, Hilton Tokyo, under the guidance of General Manager Felix Busch, has announced the launch of its 2025 Christmas cake collection available for reservations starting October 16. The theme for this year's exquisite cakes is "Christmas Ornaments," bringing the vibrant colors and sparkle of festive decorations to life. Each cake will be available in limited quantities, starting at ¥9,500, and must be reserved online with payment required in advance.

The collection artfully expresses the joy of adorning a Christmas tree with cherished ornaments. Featuring delightful motifs such as ornaments, wreaths, and pine cones, these cakes promise to elevate Christmas gatherings to a new level of elegance. 1. Crystal Rouge
This stunning cake features a layered combination of strawberry and red currant white chocolate mousse, pink grapefruit confiture, and a rich Valrhona 64% Manjari ganache. It harmonizes the savory notes of almond and butter-rich pain de gênes with the crunch of feuilletine, presenting a delightful clash of textures and flavors. Its striking red chocolate coating and delicate lace decorations evoke the sparkle of red ornaments adorning a festive tree.

Finished with white chocolate snowflake decorations and chocolate in the shape of pine cones, it truly reflects the elegance of a holiday wreath.

About Chef Hidemasa Suzuki


Hidemasa Suzuki, assistant pastry chef, graduated from an international confectionery school before joining Hilton Tokyo in 2009. After learning various culinary skills in the banquet kitchen, he moved to the pastry kitchen in 2011 and took charge of the dessert menu for the restaurant "Metropolitan Grill" in 2014. Now, as an assistant pastry chef, Suzuki collaborates with the executive pastry chef in cake development and creative processes.
