1. Masataka Nozaki from comfort dining DADA, Iwate


Blending techniques of French cuisine with the essence of Japanese ingredients, Chef Nozaki emphasizes the importance of building trusted relationships with local producers. His signature dish, Grilled Scallop on Blanquette, incorporates seabass sourced from the Sanriku coast, showcasing the depth of sustainable gastronomy.

2. Kiyo Matsuda from TOUTE MA VIE, Yamagata


Chef Matsuda’s dishes reflect the unique terroir of Mogami Town, featuring local wild game and seasonal vegetables. He presents Yamagata Wild Boar Croquettes, highlighting the art of simplicity that resonates with autumn flavors.
