Chef Patissier and Chocolatier: Kazuaki Eguchi
Born in Tokyo, Kazuaki Eguchi graduated from the Tsujii Culinary Institute and gained significant experience at high-end chocolate shops in Tokyo and Kobe. He further honed his skills abroad at the esteemed chocolatier Del Rey in Antwerp, Belgium. At just 26 years old, he took a key leadership role at Global Dining, overseeing the pastry department. Since launching Delimmo in 2013, he has become a celebrated chef patissier and chocolatier, sharing insights about confectionery on his popular YouTube channel with over 380,000 subscribers. His book, 'Mind-Blowing Pastry Making,' won the Grand Prize in the Pastry Category at the 10th Cooking Book Recipe Awards.
