To strengthen this initiative, BARNIBABI Inc. has teamed up with the prefecture to bring the Kumamoto Food Fair to life in the Tokyo metropolitan area.

Guests can expect a carefully curated selection of local ingredients, including the flavorful "Akaushi" beef, the historically significant "Amakusa Daiou" chicken, the free-range "Running Pig," and the sweet "Kumamoto Chestnut." These ingredients are not widely available due to their production methods and the emphasis on quality, bringing a unique touch to the dining experience. The chef at RIDE, Yohei Sugimoto, will be the creative mastermind behind this menu, as he aims to highlight the essence of these local products through simple, yet powerful presentations using wood-fired cooking techniques.

Meet the Chef

Yohei Sugimoto, born in 1987 in Kobe, has been dedicated to the culinary arts since graduating from a local university. He honed his skills in various Tokyo restaurants before becoming the chef at "Chez Tomo" in Ginza in 2013. He led the kitchen at "Chez Tomo" for four years before taking charge at RIDE in 2023, focusing on wood-fired cooking to accentuate the unique flavors and characteristics of the ingredients used.
