The delight in ayu and hamo traces back to ancient times when these fish were served as tributes to the imperial court. Ayu, celebrated for its unique aroma and creamy texture, is often referred to as “fragrant fish” (香魚, Kōgyo). Its delicate balance of subtle bitterness and fragrant flavor has made it a beloved summer specialty. On the other hand, hamo was a highly prized fishing catch, transported alive from Osaka Bay and Akashi Strait to Kyoto, even in times when transportation was less developed. Hamo is not just a culinary treat but also an integral part of local festivals, being showcased prominently during the famous
Gion Matsuri, often referred to as “Hamo Festival” for its significant role in the festivities.

Hirama-tsu and opened its doors in September 2017.
