The 'Parfait Rouge et Blanc' harmoniously blends strawberries, signified by the color red ('rouge'), and pears, represented by the color white ('blanc'). This exquisite dessert uses homemade strawberry sorbet, red wine-poached pears, and fragrant tea jelly, creating a multilayered taste experience that evolves with each bite. To elevate the adult palate, a cheesecake accented with Parmesan cheese and black pepper is included, offering a delightful contrast.
