Under the esteemed guidance of General Manager Yasutoshi Abe, The Kahala Hotel presents this collaboration event that brings together renowned bartender Kazu Saito from the Stage by Ethical Spirits bar. Known for his innovative cocktails, Saito will showcase his skills using the hotel’s original gin, THE KAHALA GIN Rebloom. This gin is the result of a partnership between the hotel and Ethical Spirits Inc., emphasizing the repurposing of ingredients that would otherwise go to waste, embodying the philosophy of 'reblooming' these elements into something new and exquisite.

Saito's cocktail creations are celebrated for their delicate balance and personal interpretation, blending historical cocktail essentials with modern creativity. He has a profound understanding of how to extract the unique characteristics of each ingredient. This gin incorporates botanicals derived from ingredients that have been surplus to the needs of THE KAHALA Lounge, such as mango and pineapple peels, tea leaves, and coffee grounds. By infusing these elements, THE KAHALA GIN Rebloom manifests the essence of 'reblooming'—bringing new life to ingredients that have served their purpose.

Upon pouring, it releases a delightful aroma reminiscent of plumeria flowers, coupled with vibrant notes from the mango and pineapple. The sweetness from the tea leaves enhances the overall taste, providing a lingering, festive finish that celebrates the revival of these ingredients.

- Base Spirits: Produced from alcohol (made in Ibaraki), sake lees shochu (from Saga and Akita).
- Botanicals: Juniper berries, coriander seeds, angelica root, orris root, lemon peel, orange peel, bergamot peel, chamomile, coffee grounds, tea leaves, feijoa, banana, roselle, jasmine, palo santo, coconut, cinnamon leaves, pepper, kaffir lime leaves, sansho, cardamom, Hawaiian salt, mango, pineapple, and apple.
