Nana's Green Tea Introduces Seasonal Bowl Featuring Azumino Salmon for the First Time

Nana's Green Tea Launches Exclusive Azumino Salmon and Avocado Bowl

Starting April 7, 2026, Nana's Green Tea, a global café brand known for its focus on matcha and Japanese tea, will introduce a special seasonal dish—Azumino Salmon and Avocado Bowl—available nationwide until June 25, or until supplies last.

What Makes the Bowl Special?

The highlight of this exclusive bowl is its premium Azumino salmon, sourced from Fujiya Wasabi Farm in Azumino City, Nagano Prefecture. This is the first time that a drinking and dining chain has incorporated Azumino salmon into its menu. The salmon is raised in natural spring water originating from the melting snow of the Northern Alps, which offers a stable and rich environment for fish farming.

The dish combines the delicate flavor and rich texture of the salmon with creamy avocado, okra, tomatoes, cucumbers, and fresh wakame. A special soy sauce made in-house enhances the flavor, delivering depth and umami. Each bowl comes with additional condiments—stem wasabi, mayonnaise made with free-range eggs, and lemon—allowing customers to enjoy various flavor combinations. Diners can relish the pure taste of the ingredients, then enhance it with lemon, stem wasabi for a refreshing kick, or blend the wasabi with mayonnaise for a smooth spicy touch.

The Background of the Salmon

The Azumino salmon is cultivated using the pure spring water of the Northern Alps, which is rich in oxygen and flows continuously at a stable temperature year-round. This provides an ideal habitat for salmon, resulting in fish with a clean taste and a refined fat content. The commitment to using locally sourced ingredients that align with the values of Nana's Green Tea led to this innovative partnership with Fujiya Wasabi Farm.

The head of Fujiya Wasabi Farm, Mr. Mochizuki, along with Nana's Green Tea's representative, Mr. Kutami, have both expressed their excitement about the collaboration. The farm, established in 1936, has long been known for its wasabi, utilizing the unique spring water to produce high-quality crops. Recently, they have expanded their operations to include salmon farming, harnessing abandoned facilities and sustainable practices to enhance local economic activity.
