Kappa Sushi Launches Exciting Sustainable Menu for Food Lovers

Kappa Sushi's New Sustainable Offerings



Kappa Sushi, part of the Colowide Group and headquartered in Yokohama, Kanagawa Prefecture, is set to host the "Kappa's Sustainable Festival" from October 9 to October 22, 2025, across all its branches. This initiative celebrates sustainable cuisine that harmonizes taste with environmental awareness and health.

At the core of this event are three new sustainable dishes featuring domestic fresh yellowtail (hamachi). One innovative creation is the ‘Hamachi Karasumi’, which utilizes previously unused yellowtail roe to elevate the flavor profile as a topping on fresh sushi. Another highlight is the 'Ranger-style Hamachi Karasumi Creative Wrap', which showcases a fisherman's seasoning approach, adding a unique twist. Additionally, diners can enjoy the rich, umami flavor of ‘Tuna Broth Soy Sauce Ramen with Chewy Thick Noodles’ made from the nutritious parts of tuna that are not typically used in sushi.

Aside from these new items, Kappa Sushi also aims to reduce food waste and promote environmental sustainability through its traditional offerings. For example, dishes like the ‘Seafood Tataki Zaku Spicy Oil Gunkan’ and ‘Sushi Chef's Steamed Egg Custard’ creatively use ingredients that would otherwise be discarded, reinforcing its commitment to both sustainability and flavor.

Additionally, Kappa Sushi participates in the Ministry of Fisheries' “Sea Treasure! Women's Fisheries Project,” which supports women in the fishing industry by promoting the value of their insights and abilities in creating new products. This collaboration features the delicately flavored ‘Otome Tai’ (a type of sea bream) from Kochi Prefecture in a variety of dishes including sushi, ramen, and carpaccio, all available during the festival.
