Supporting Sustainable Japanese Beef

Since 2015, Wondertable has committed to securing high-quality Japanese beef sustainably. As part of this initiative, they have collaborated with local farmers in Yamagata Town, Iwate Prefecture, to raise Tankaku calves in a healthy environment. These cattle are pasture-raised, ensuring that they grow healthy and produce high-quality meat. Given that Tankaku beef represents just 0.5% of the total Japanese beef market, this culinary offering is indeed a rare treasure.
