Starter: Australian Beef Tartare with Yatara Terrine


To kick off the meal, diners will indulge in the Australian Beef Tartare combined with Yatara Terrine, a reinterpretation of a traditional Nagano dish. The terrine features an array of seasonal vegetables that may otherwise go unused due to size or appearance, arranged in a vibrant mosaic. This combination highlights the crunchy textures and rich colors of the veggies, poised against the deep flavors of the beef tartare infused with Shinshu and fluke miso. The dish embraces the concept of utilizing every part of the ingredient, using secondary cuts of beef for the tartare.

Main Course: Grilled Lamb Chops with Shepherd's Pie


Next, guests will be treated to the Grilled Lamb Chops accompanied by Keema-style Shepherd's Pie. Concluding the meal is the Eaton Mess Chocolat, a twist on a beloved British dessert. This dish balances rich organic chocolate with almond milk and cookie scraps, topped off with an ice cream made from sake lees, a byproduct of sake brewing.
