NINJA SPEED™ Unveils New Collaboration with Mino City
The sushi fast-food brand
NINJA SPEED™, a collaboration between the Mitsukan Group and the Hata Group, is set to launch its third municipal collaboration, featuring a limited-time menu that celebrates local flavors from Mino City, Gifu Prefecture. This exciting initiative will run from March 2 to March 31, 2026.
In this collaboration, all menu items will utilize
Hatsu Shimo, a premium branded rice known for its excellent texture and flavorful grains, making it the ideal companion for sushi rolls. Additionally, the menu will showcase a unique dish made with
Hida beef, richly flavored and sweetened through a special braising process, promising a delicious twist for sushi lovers.
NINJA SPEED™ aims to bring the fresh appeal of sushi to urban fast food, allowing diners in Tokyo to enjoy the essence of Mino City's culinary offerings. Starting in March 2026, the brand will transition from its previous location at CoCo Lounge on the second floor of the Tokyo World Gate Kamiyacho Trust Tower, with a new kitchen truck stationed in the vibrant outdoor plaza known as
TWG Square. This change will enhance visibility and accessibility, inviting more patrons to experience the thrill of freshly made sushi.
NINJA SPEED™: A New Food Adventure
The birth of
NINJA SPEED™ stems from a business contest organized by the Mitsukan Group. Emphasizing the philosophy of satisfying hearts with freshly made sushi, this fast-food concept specializes in
Akashari—a unique sushi rice made using red vinegar for a rich, sophisticated flavor. The brand prides itself on maintaining an optimal temperature for the rice to preserve freshness and enhance its taste.
This collaboration further aligns with the “
CoCo JAPAN” project championed by the Mori Trust Group, which focuses on promoting unique Japanese ingredients and products from various regions to urban populations. NINJA SPEED™ serves as a model case for showcasing the agricultural value of Mino City's contributions from an urban perspective, carving pathways for innovative regional partnerships.
Product Offering
During the collaboration period, the kitchen truck will serve a variety of mouth-watering sushi items:

Hida Beef Shigureni Roll - A roll featuring sweet and savory Hida beef.

Wasabi-Flavored Salmon Avocado Roll - A delightful combination of salmon and avocado with a kick of wasabi.
3.
Wasabi-Flavored Tuna Avocado Roll - A fusion of the sea and freshness.
4.
Crispy Chicken Tempura Roll - A crunchy option for a diverse taste.
All rolls will be created using Gifu Prefecture's
Hatsu Shimo rice. Customers can also look forward to combos that include miso soup, enhancing the traditional dining experience.

Opening Hours: Mondays to Fridays from 11:30 AM to 2:00 PM (Closed on Saturdays, Sundays, and holidays). Note that sales will conclude once the daily supply runs out.
Access: Directly connected to Kamiyacho Station on the Tokyo Metro Hibiya Line.
