Sapporo Lion Co., a subsidiary of Sapporo Holdings based in Chuo-ku, Tokyo, is thrilled to announce the limited launch of a new draft beer, YEBISU Creative Brew Aio-mou, starting April 14, 2026. This innovative brew is available exclusively at YEBISU BAR locations across Japan.

A Unique Flavor Gradient Inspired by Indigo

The Creative Brew series represents a new frontier in beer craftsmanship, challenging traditional notions of flavor that have been perfected over 130 years of brewing excellence at YEBISU. With each iteration, the series seeks to enhance tastes and enjoyment through creativity. The Aio-mou beer is the twelfth installment, celebrating the rich heritage of Japanese indigo dyeing by collaborating with BUAISOU, renowned artisans known for their modern interpretation of this age-old craft.

Aio-mou features a distinct flavor profile that reflects the depth of indigo's hues. This exquisite brew combines local Shinshu Wasase hops—precisely cultivated for over a century—with a brewing method that separates the husks during the malt milling process. The result is a clean, refined bitterness complemented by the fragrant citrus notes derived from two distinct hop varieties, culminating in a complex yet balanced beer experience.

Unforgettable Pairing: BUAISOU Meets YEBISU

Aio-mou also introduces an exciting pairing experience with a special menu item available only at YEBISU BAR. The Tokushima Ham and Corn Spring Rolls, priced at 780 yen (tax included), perfectly accentuates the beer’s unique elements. With the sumptuous flavor of Tokushima's ham, balancing textures from sweet corn, and a hit of savory bacon fat, this dish embodies a culinary synergy that enhances the beer’s profile.

The dish is paired with a special tartar sauce made with koji salt and sudachi pepper, complementing the fermentation processes shared by both the dish and the beer. Guests can savor the harmonious citrus aroma from the combined hops and sudachi, enhanced further by the umami of both the spring rolls and YEBISU, offering a multifaceted taste experience with each bite and sip.
