Wondertable, a vibrant restaurant group headquartered in Shinjuku, Tokyo, this event will bring together the finest cuts from the
Iwate Prefecture’s Yamagata Town, where this exceptional breed of cattle is raised.
Tankaku cows, also known as Japanese Shorthorn, are renowned for their rich, deep flavors that develop not from marbling, but from the unique taste of lean meat that grows fuller with every bite. Since 2015, Wondertable has prioritized working closely with local farmers to refine the growth and quality of these cattle, guaranteeing a consistent supply of high-quality beef that reflects the essence of Japanese culinary traditions.

Naturally raised with the
“Summer Mountain, Winter Field” grazing method, Tankaku cattle graze in the mountains during summer and return to sheltered barns in the winter. This traditional farming practice, however, is facing challenges due to an aging farmer population and decreasing numbers, making it all the more important to highlight this breed and preserve its legacy. Approximately
7,000 Tankaku cattle are raised each year across Japan, with about
2,500 of them in Iwate Prefecture, highlighting their rarity and cultural significance.
