From October 29 to 31, 2025, the Four Seasons Hotel Tokyo Otemachi will host an exclusive three-night dining event featuring the internationally acclaimed chef, Kristian Baumann, from the Michelin two-star restaurant Koan in Copenhagen. Nestled in the vibrant Chiyoda district, the hotel’s signature restaurant, est, will spotlight Baumann’s unique fusion of Korean and Danish culinary traditions, a culinary journey unmissable for fine dining aficionados.

Chef Kristian Baumann is known for his innovative approach to cuisine, having achieved the prestigious Michelin two-star award in just the first year of Koan’s establishment. His dishes harmoniously blend his Korean roots with Danish sensibilities, providing diners with a unique experience that evokes a profound cultural dialogue.

The exclusive menu at est will commence with a refined aperitif that encapsulates the essence of French cuisine, curated by est’s head chef, Guillaume Brahceval. Diners can expect standout dishes including, but not limited to, ‘Hokkaido Scallops with Omija Berries and Sweet Potato’ and ‘Oysters poached with Champagne and Korean Gum Te.’ A highlight of the menu is the ‘Grilled Seaweed Ice Cream with Hazelnut Oil and Caviar,’ a true testament to Baumann’s innovative culinary philosophy. The meal will conclude with a delightful dessert crafted by est's pastry chef, Michele Abate Marco, ensuring a decadent end to this exceptional dining experience.

In addition to the exquisite food, guests will enjoy meticulously selected pairing beverages guided by Koan's head sommelier, Lars Peders Nielsen. The drink selection promises a diverse array, featuring Loire Valley Chenin Blanc, Anjou's E.G. Thibault Bouduignon, and a Spicy Margarita, each chosen to complement Baumann’s creations perfectly.

The name est encapsulates the values of Emotion, Saison, and Terroir, foundational aspects upheld by its chef de cuisine Guillaume Brahceval in his culinary practices. At est, over 95% of ingredients are sourced from Japan, emphasizing direct procurement from producers to celebrate the integrity of local terroir.

Located on the top floor of Four Seasons Hotel Tokyo Otemachi, est offers diners stunning views of Tokyo’s dynamic skyline and an engaging, lively open kitchen.
