Inspired by Lydia's mother, who used to make breakfast burritos during Lydia's childhood, they have built their business around family principles. Friends and family members support the café's operations in various roles—many of whom had no previous restaurant experience prior to joining this culinary adventure.

In light of recent challenges, including their son's health issues requiring frequent hospital visits, Lydia and John embraced the need for professional help and welcomed Joy Wilson as General Manager. With her extensive expertise in the restaurant sector, Joy has propelled LJ's to new heights, increasing sales by an impressive 30% in just her first year, ensuring the family-focused atmosphere remains central to the café's success.
