In an exciting development for culinary enthusiasts, the Institute of Culinary Education (ICE) and Wagyu Sommelier have announced that they will be launching their renowned certification program in New York City for the first time. Set to take place from October 26 to 28, 2026, this unique multi-day experience is part of a broader partnership aimed at enhancing culinary knowledge and education surrounding Japanese Wagyu beef.
Certification Details
The certification program will provide comprehensive training on various aspects of Japanese Wagyu. This includes lessons on quality assessment, traceability, nutritional benefits, sourcing, and heritage. Participants will also gain practical experience in butchery and whole-animal utilization.
What sets this year's event apart from previous iterations is its expanded curriculum, which now includes tailored training for front-of-the-house teams in addition to hands-on cooking demonstrations and chef-led sessions. This approach aims to equip participants with a holistic understanding of Wagyu that extends beyond kitchen skills.

An Opportunity for Aspiring Chefs and Hospitality Professionals
This initiative is particularly focused on enabling students to participate without incurring additional costs. Approximately 35 students from ICE will be selected to attend the New York certification at no charge, while industry professionals will also have the chance to engage in the training. The selection process is led by Mishel LeDoux, the Director of Hospitality and Management Programs at ICE, alongside Barry Tonkinson, Senior Vice President of Culinary Operations in New York.
