From December 24 to 25, 2025, the hotel's signature dining venue, Gallery 11, will serve a delectable Italian feast crafted with the finest local Japanese ingredients.

The culinary mastermind behind this unique menu is Executive Chef Davide Di Dio, hailing from Naples, Italy. Chef Di Dio melds his native Italian recipes with the vibrant flavors of Japan, creating an extraordinary dining experience that promises to tantalize your taste buds. His creativity shines through in a special Christmas course that embraces the rich flavors of winter, such as seasonal monkfish prepared as an exquisite Acqua Pazza, and home-made tortellini filled with chicken, porcini mushrooms, and luxurious black truffle.

To ensure a festive atmosphere, each course has been thoughtfully curated, beginning with a selection of delightful WELCOME SNACKS including:

Meet the Chef: Davide Di Dio


Chef Davide Di Dio's culinary journey began in Italy, where he operated his restaurant before making his way to Japan in 2003. After working as sous chef and eventually as executive chef at luxury hotels in Tokyo, his extensive experience across various countries, including the UK, Spain, France, and Australia, allows him to infuse unique accents into his dishes.

At Gallery 11, he articulates the essence of Italian cuisine with a creative twist, ensuring diners are treated to a memorable culinary journey that celebrates both his heritage and the local culture.
