The excitement around the POPUP Ramen series continues with its 10th installment, featuring the esteemed ramen shop, Torikatsu. Selected as a Bib Gourmand by the Michelin Guide for Aichi, Gifu, and Mie, Torikatsu is now gracing the Yaesu Public on the second floor of the Tokyo Midtown Yaesu complex. Opened in March 2023, the pop-up is a celebration of rich culinary heritage and seasonal ingredients.

Nestled quietly in Kuwana City, Mie Prefecture, Torikatsu has earned a reputation for its refined ramen influenced by the craft of sushi-making. With a legacy of three generations as sushi chefs, the owner uses their expertise in handling seafood to create a delicate broth infused with umami. Each bowl reflects the season's bounty, offering diners a fresh experience with every visit. One standout dish is the Clam Salt Ramen, which represents the pinnacle of their flair with hand-selected clams, delivering a soothing and rich flavor experience.

The POPUP Ramen initiative is a traveling ramen restaurant series that showcases popular ramen spots from various regions across Japan. Part of the RAMENWALKING project, these pop-up locations feature some of the finest ramen restaurants, ensuring a rewarding experience for all attendees. Each event rotates, promising guests new culinary curiosities to explore periodically built around seasonal ingredients.

Under the guidance of Hiroshi Osaki, president of Ramen Data Bank, the project includes well-known and hidden gem ramen shops that come together for limited engagements, creating a vibrant atmosphere for ramen lovers.
