The Terroir Yamanashi menu captures the very essence of summer in the region. Each dish tells a story, transforming the rich bounty of Yamanashi into an unforgettable dining experience. The journey begins with an enchanting Amuse Bouche that evokes the pristine waters of Oshino Hakkai, featuring Kai Salmon served with a clear jelly made from local spring water, symbolizing Yamanashi's clarity and freshness.

Next, indulge in a trio of Appetizers inspired by the spiritual cuisine of Minobu. This creative selection features plant-based dishes such as homemade black sesame tofu resembling volcanic rock, chilled Junsai and winter melon, and grilled eggplant served with silky soy milk.

The journey continues with a refreshing Cold Soup combining peach and paprika with the depth of Kōshū Miso, harkening to local produce and flavors.

A Festival of Flavors


The highlight of the meal is a beautifully crafted plate of Sashimi, representing the flower festival of Shinmei Fireworks. The dish artfully presents Shingen Shrimp alongside Scallops, embodying the splendor of colorful fireworks and local seaweeds.

For the Fish Course, guests are treated to Fuji no Suke, an original crossbreed of king salmon and trout, expertly grilled and served with a refreshing watercress sauce, invoking the serenity of the Fuefuki River.

The Main Dish features the luscious Arita Beef, interpreted through the lens of the Fire Festival. This meltingly tender beef, served as a grilled shabu, is presented with a flamboyant display, evoking the strength of summer fires alongside the majestic Mt. Fuji.

Completing this culinary odyssey is Yatsugatake Corn Rice, a dish that reflects the beauty of sunflower fields, and a delightful dessert, Summer Fuji Peach Clouds, embellished with peach espuma and delicate meringue that conjures the atmosphere of celebration and freshness.
