As part of Hakodate University's business practice program, students actively engage in identifying and addressing challenges related to agriculture and community sustainability. The spotlight of this initiative is on the unusual "hajiki vegetables," which, despite having the same quality and flavor as standard produce, are often overlooked due to aesthetic imperfections. By reimagining these vegetables, the resort’s restaurants—"Kumonami" and "Tsukifune"—offer special menus that showcase the value of these unique ingredients.

Each day's menu features seasonal vegetables, such as daikon, turnips, beets, corn, and carrots, sourced directly from local farms.
