Why Yellow Peas?

Yellow peas have a rich history, cherished in regions like Northern Europe and Greece. They are not only high in dietary fiber but also contain resistant starch, gaining attention for their health benefits. Additionally, the mineral content, including iron, zinc, and potassium, positions yellow peas as a global source of plant-based protein. Their cultivation is also sustainable due to the nitrogen-fixing properties of the legumes, reducing the need for fertilizers, making them a planet-friendly ingredient.
