In January, the Specialty Food Association (SFA) hosted its inaugural Winter FancyFaire at the San Diego Convention Center, bringing together over 12,000 industry professionals. This three-day trade show, held from January 11 to 13, aimed to set the tone for the specialty food market for 2026. The event was not just a showcase of products, but an immersive experience redefining how the industry connects with consumers and each other.

The Winter FancyFaire was home to more than 1,000 exhibitors showcasing a diverse array of specialty food items, with nearly 310 of those participants debuting their products in the Debut District, a dedicated section for newcomers. As a platform for established and emerging brands alike, the show highlighted products that promise to dominate retail shelves in the coming year.

As the first trade show of its kind for the SFA, the Winter FancyFaire introduced several expanded experiences aimed at enriching attendee engagement. Participants could immerse themselves in local flavors through the Campus Tasting Trail, which connected show-goers with the surrounding San Diego culinary scene. This initiative included curated menu samplings at local restaurants, featuring SFA member products and fostering community connections.

The show also emphasized creativity and interactivity through various unique offerings such as virtual reality showcases, creative sampling, and personalized networking events. The Winter FancyFaire served as a launch pad for the SFA's inaugural Trend of the Year. Named SenseMaxxing, this trend encapsulates the sensory-driven approach consumers are expected to embrace in the coming year. Alongside SenseMaxxing, the SFA unveiled five additional key trends for 2026: Rooted Rituals, Honest Processing, The Appetite Reset, The Promiscuous Palate, and Shelf-Stable Chic. These trends illustrate the evolving dynamics in consumer preferences and spending behaviors as they relate to specialty foods.

SFA President Bill Lynch expressed enthusiasm regarding the positive responses from both exhibitors and attendees. “Connecting with our industry peers to explore the trends shaping the future has been invaluable,” he said. “The Winter FancyFaire has cemented its place as a pivotal industry event to kickstart each year.”

The attendance and participation levels at the FancyFaire emphasize the collective enthusiasm for innovation in the specialty food domain across the globe. Community Commitment and Future Events


Recognizing its responsibility to the local community, the SFA implemented an Exhibitor Food Donation Program in collaboration with Feeding San Diego. This initiative aimed at redirecting unused food from the event back into the community, ensuring that local residents benefited from the show.

Looking ahead, the SFA has confirmed that the next Winter FancyFaire will take place in San Francisco from January 17-19, 2027. On the calendar is also the Summer Fancy Food Show, set for June 28-30, 2026, at the Javits Center in New York City. This continued commitment to year-round trade opportunities is emblematic of the SFA's dedication to fostering connections across the specialty food landscape.
