Hotel Granvia Kyoto is launching its exquisite "Kyoshio Melon Parfait" from May 7, 2026, until June 30, 2026, at the 2nd floor café restaurant "Le Temps." This limited-time offering features the exquisite sake lees from the renowned Sasaki Brewery, known for its rich history in Kyoto.

The Kyoshio Melon Parfait artfully combines local Kyoto ingredients including sake lees, milk, and yogurt from the beautiful Miyama region, paired with the aromatic sweetness of premium Earl melons. About a third of an Earl melon is used, its juicy flesh sliced into beautiful wedges that gracefully adorn the glass. Topping this visual masterpiece is a delicate candy design crafted by the pastry chef, elevating the parfait's elegance.

The sake lees incorporated into this parfait come from Sasaki Brewery, which utilizes "Kyo no Koto," a unique Kyoto yeast developed by the Kyoto City Industrial Technology Research Institute. This sake lees not only imbues the parfait with a sublime ginjo aroma but also provides a rich depth that pairs exquisitely with both the cream and crumble involved in the parfait's composition. This balance harmonizes beautifully with the rich sweetness of the Earl melon.

The parfait is thoughtfully designed, beginning with a refreshing gelatin layer at the bottom, made from dry white wine and lemon juice, set just right for a delightful texture. Following this, a soft mousse made from Miyama yogurt is carefully poured in. The top layer consists of a crispy crumble made with sake lees and local milk, showcasing the pastry chef's expertise in texture contrasts.

At the center of this beauty lies a rich sake lees cream, skillfully combined with local milk, offering a subtle rice flavor.
