Their recent study showed that over 73.8% of participants experience cooking burdens during summer, with this concern climbing to a staggering 89.1% among families with children up to high school age. The survey highlighted the demand for meals that are quick to prepare, do not require cooking over heat, and are refreshing enough to enjoy in hot weather.

Interestingly, over half (53.9%) of adults in their twenties indicated they often consume cold rice, and around 59.3% expressed that summer rice recipes would likely increase their rice consumption. In response to these insights, Zennoh developed the 'Hiyashi Meshi' series featuring delightful summer dishes paired with ingredients that complement cold rice. Here are three refreshing recipes created in collaboration with rice cuisine researcher Noriko Shirai:

Ingredients: 120g rice, 1 tsp miso, ½ tsp curry powder, 1 tbsp yogurt, ½ cup water, 2 okra pods, 20g red bell pepper, 1 tbsp sweet corn (frozen), 3 mini tomatoes (frozen), 50g steamed chicken.

Instructions:
1. Microwave the okra covered for 40 seconds, cool in cold water, and slice into pieces. Dice the bell pepper and peel the mini tomatoes.
2. Mix the miso, curry powder, yogurt, and water. Combine with the prepared vegetables and serve over chilled rice with shredded steamed chicken on top.

2. Chilled Beef Bowl with Dashi

Ingredients: 120g rice, 50g thinly sliced beef, 1 tsp soy sauce, 1 tsp sugar, 10g bitter melon, 1 tbsp chopped green onion, 1 frozen mini tomato (10g), ½ cup hot water, 1g katsuobushi, ¼ tsp salt.

Instructions:
1. Prepare the broth by soaking katsuobushi in hot water and chilling.
2. Marinate the beef with soy sauce and sugar, then microwave for 1 minute.
3. Thinly slice the bitter melon, and prep the green onions. Serve chilled rice topped with beef and melon. Add grated frozen tomato and the chilled dashi to enjoy as a donburi.

3. Shaved Cucumber Ume Chilled Soup

Ingredients: 120g rice, 30g frozen cucumber, ½ myoga (Japanese ginger), 2 shiso leaves, 1 tbsp white sesame, 1 umeboshi, ½ can of tuna, 2 tsp miso, a bit of grated ginger, ½ cup water.

Instructions:
1. Rinse the rice under cold water and place it in a bowl.
2. Mix the tuna, miso, ginger, and water in a bowl.
3. Defrost and slice the cucumber. Layer over the rice, then pour on the mixture and add shiso leaves and sesame seeds.

Introducing Summer Home Lunches


In addition to Hiyashi Meshi, Zennoh is launching 'Summer Home Lunches,' a collection of eighteen microwave-friendly recipes aimed to assist children staying home during the summer break. The meals are categorized into three themes: meat, fish, and vegetables, ensuring they are easy for kids to make. Zennoh plans to share these kid-friendly recipes in partnership with illustrations to guide preparation on their social media platforms.
