A New Collaboration between Chef Masayuki Okuda and Oisix
Starting April 23, 2026, Oisix, a company offering a subscription-based food service, will introduce new meal kits in collaboration with Chef Masayuki Okuda, the owner of the renowned Italian restaurant Al Checciano. This marks the first collaboration that highlights the rich culinary heritage of Yamagata through the meal kit ‘Kit Oisix’. Two new dishes will be available: the ‘Easy Salted Pork with Fluffy Eggs Western-style Comfort Rice’ and ‘Chef Okuda's Direct Recipe! Okahijiki and Pork Tomato Stew’.
A Pioneer of Local Ingredients
Chef Okuda has always emphasized the importance of utilizing local ingredients in his cooking. Being deeply connected to the Yamagata region, he often explores local farms to understand the essence of the ingredients he uses. His culinary philosophy is centered around sharing the beautiful flavors of his hometown with the world, bolstering local agriculture, and allowing these fresh, simple, and quick-prepared dishes to shine on both local and international stages.
Oisix aims to offer a unique dining experience reminiscent of traveling through Japan by introducing regional flavors in convenient ‘donburi’ style meals from all 47 prefectures starting in December 2025. For this collaboration, Chef Okuda has devised dishes using beloved Yamagata vegetables known for their exceptional quality which have won the hearts of Oisix customers over the years.
Inspired by Traditional Japanese Dishes
The ‘donburi’ style dishes proposed by Chef Okuda draw inspiration from traditional comfort food, notably the ever-popular oyakodon (chicken and egg rice bowl). They carry unique flavors that only a seasoned chef like him can craft. To emulate his distinct taste, the dish includes pork prepared with a pancetta-style method, combined with stock and Shonai mushrooms. The result is a rich umami experience that stands out.
In contrast, the okahijiki and pork tomato stew features tender pork shoulder braised in a rich tomato sauce combined with balsamic.
