Hirosaki Coffee Tiramisu. This delectable treat is overseen by Chef Kyohei Mouri, a visionary who honed his skills in Michelin-starred kitchens. This exciting addition follows the success of its predecessor, the
Hirosaki Tiramisu, made with locally sourced apples, which has garnered significant media attention and sales since its launch.
The introduction of the Hirosaki Tiramisu in September 2024 showcased the best of local ingredients. This innovative take on a classic dessert quickly became a sensation, being featured across various television broadcasts and news articles. Realizing the demand for further regional exploration, Red Horse Corporation aimed to spotlight Hirosaki's coffee culture by creating the new Coffee Tiramisu.
In partnership with Chef Mouri, who combines his culinary expertise and artistic flair, the new dessert emphasizes the distinctive flavors of espresso. The meticulous process includes sourcing premium espresso beans and refining roasting methods to create a depth of flavor that resonates with coffee aficionados. Chef Kyohei Mouri, owner and head cook of
PIZZERIA MIA, has a story that reflects his commitment to quality and tradition. He trained at Tsujichuo Culinary Institute and earned valuable experience working in renowned establishments in Italy and France before returning to Hirosaki to share his passion for local cuisine. Since opening PIZZERIA MIA in 2020, Chef Mouri has focused on utilizing regional products, ensuring that every meal tells a story of Hirosaki’s rich agricultural heritage.
